What's Baking? || March

by Bethany

One of the things I missed most at school was having a kitchen to bake in. There were a few opportunities to borrow a kitchen for an evening, but it's nothing like being home and baking something on a whim.

This past month I've been doing a lot of baking, so I thought it would be fun to share some of the delicious new recipes we've discovered.

Note: The pictures are not my own, and clicking on them will bring you to the recipe source.

It would have been neat to photograph the baked goods myself, or with the help of Becca, but we have a dark little kitchen, and usually by the time I think about taking pictures, everything has been eaten. :)

This month started off with a batch of popovers.

I've used this recipe with lovely results a couple times now. Only, be careful not to overfill them, even if you're trying not to waste batter. They get really tall, then tip over and spill out their raw insides onto the bottom of the oven.

Then there were these orange scones.

Becca read earlier that you need clotted cream to go with scones, so we made some of that too.
It's like thick, buttery, whipped cream. Sound good?

Orange scones and clotted cream: Best. Thing. Ever.

Next up was Becca's birthday cake. She pinned lots of ideas, but finally settled on this one.
(We apologize for flooding any of our Pinterest followers' main page with delicious looking cake pictures :) )

I substituted kefir for the yogurt in the cake, but otherwise stuck to the recipe. It was really yummy, but our dad got to finish it as us ladies were gone for the weekend after.

When we got home home, Becca found the rest of the clotted cream in the back of the fridge, and we couldn't let it go to waste. So what did that mean?

Make more scones!!

I tried a basic recipe this time, real English scones, and with the clotted cream and a bit of jam, they were just as scrumptious.

My most recent recipe discovery happened yesterday. Our dad was on our computer in the kitchen, watching youtube, when a fast-food add for bacon cheeseburgers came on. Mom and I looked at each other- "Doesn't that sound good for supper? We have ground beef, and if you wouldn't mind running to the store for some buns, we should be set."

So I drove to the grocery store, hoping there would be some buns from our local bakery. But I checked the shelves high and low, and there were none to be found. Looking at the ingredients on other packages of hamburger buns was not very appetizing- hydrogenated oils, high fructose corn syrup, and other junk. Maybe I could just make some?

Mom was disappointed when I came home empty handed, well, except for some ice cream. She thought buns would take too long to make, it was already around 4:30, and we were getting hungry. But I still wanted to try. So I searched for a quick rising recipe and found these.

40 minute super soft hamburger buns.

Think we can wait that long Mom?

They were out of the oven before Mom was done cooking the burgers, and they got nice and fluffy. I made the batch into 8 slighting bigger buns, instead of the 12 smaller buns the recipe directed. Everyone enjoyed them, and agreed they were a make-again recipe.

What have you been baking recently?

Do you have a favorite recipe to make? I'd love to hear it!

What did you think of this post? Was it a "make-again"? :)

  6. Ooooo yay! Baking! I absolutely love making scones with clotted cream. Recently I tried making a rose and dark chocolate tart. They were okay for my first try, but I'll have to try again and see if can do them better. XD
